Gluten Free Peanut Butter Snack Bars


I get to a point every day where I feel like I need a snack. 

Usually somewhere in between breakfast and lunch or lunch and dinner. I eat a lot of fruit throughout the day, but sometimes fruit just doesn't full the whole. Now that is the time when I start daydreaming about crisps. 

Or at least it was until I discovered the delicious, No Bake, Gluten Free (winner!), Vegan,  Peanut Butter Snack Bars.

So here we go!

7 facts about me:

1. I am addicted to tea. I own so much tea I'm running out of cupboard space in my kitchen!

2. I've worked as a Clown. For 5 years part time. It was the best job ever! 
I used to work at children's parties, weddings, community fun days, music festivals and more. 
My clown name was Sparkles, and my specialties were balloon modelling, facepainting and disco games.

3. I'm always cold. I don't know what it is, but I seem to always be colder than the average person. I usually always wear some kind of a scarf - even in the summer! 

4. So far I have lived in 3 countries. Lithuania, Ireland and now England. I'm hoping to add more to this list.

5. I wish I was born in the 60's and could have lived through the flower power era.

6. I have just watched the Harry Potter films for the first time last week. Previous to that I had always fallen asleep. Believe it or not I've not read the books either! After seeing all the films I do feel like I really need to read the books.

7. I really want to travel the world. There's nothing quite like getting off the place and inhaling the air of another country, knowing that many adventures await. I constantly feel a strong urge to jet off somewhere new.  So far I have visited 15 countries.

It took me a lot longer to think of these 7 things than it should have done. It seems my mind likes to go blank when I'm put on the spot!

Sunny Saturday By The River



After days of horrendous wind and rain last weekend we finally got blessed with some sunshine. 
To take advantage of the sunshine and to keep up with my list of 10 Things To Do To Stay Happy This Winter me and the boy decided to go for a walk by the river.

Christmas festivities are over and it’s easy to start feeling drained and depressed because it's cold, grey and dark outside.
Winter is my least favourite season and even though I try to stay positive I often start feeling deflated and not really like myself. I'm sure I'm not alone on this.

Baby It's Cold Outside

The Holidays are over and me and the boy have had the most amazing week at home visiting my family in Northern Ireland.


On one of the days we went for a walk to the Roe Valley Country Park. The country park is probably my favourite part of the town as I'm massive nature lover.

I learned that some scenes of the film Dracula Untold were shot there.





It was a really cold and frosty day but the sun was still shining!





The River Roe flows through the country park.

It was lovely to catch up with my brother and his girlfriend and to be out in the country side.


This has been one of the best Christmas holidays that I've had and I was really glad to start the new year surrounded by my family and old friends in Northern Ireland.

Mmm Coffee

Anyone who knows me knows that I have a bit of an addiction to tea.
I love green, white, red, fruit and herbal tea and own about 30 different kinds.

However, in the last year I have really developed a strong appreciation for good coffee too.

I love creamy flat whites, milky lattes, zesty americanos and pretty much everything in between as long as it's of high quality!


The guys at Press Coffee House have very kindly sent me some of their coffee to try and before I tell you about the actual coffee I must say I completely fell in love with their packaging and design.




They also included a cute little taster pot of fig jam from Harrogate Preserves Company.


The coffee I got sent was Yirgacheffe Reko (Ethiopia).


The coffee is really smooth and zesty with undertones of mango and peach. 
Unlike some coffees which can leave a velvety finish on the tongue this coffee tastes clean and crisp.

It's not a very strong coffee which I really like as too much caffeine can leave me feeling a little jittery.


You can buy a 250 grams bag of Reko for £7.50 which I personally think is really worth it as this coffee has such a lovely distinctive taste. 
It really is a treat in the morning!
