Sweet Freedom - Gluten Free Pancakes of Dreams

I have to say I have loved pancakes ever since I was a child. My mama often made them for breakfast and we'd have them with all sorts of different topping combinations including home made strawberry jam, sugar and soured cream, and chocolatte spread. Now, since I've become an adult two things have happened:

1. I developed a gluten intolerance
2. I swear I can put on a kilo just by sniffing pancakes never mind eating them

However, I've been determined to come up with a pancake recipe that was both Gluten AND Guilt free. I present to you the recipe for my best creation yet  - Sweet Freedom - Gluten Free Pancakes of Dreams 


Healthy Gluten Free Pancakes Recipe

RECIPE

INGREDIENTS 

Serves 1
  • 60g Porridge Oats (check the label to ensure they have no added gluten)
  • 1 Large Egg
  • 1 Tablespoon of Sweet Freedom Syrup for the batter & however much you want for drizzling
  • 60g Blueberries
  • 60g Raspberries
  • 100ml Almond Milk (normal milk would work just as well)
  • Small pinch of Sea Salt
  • Quarter of a teaspoon of Baking Podwer
  • 1 Tablespoon of Organic Extra Virgin Coconut Oil

METHOD

Pancakes & Sauteed Raspberries
  1. Put the porridge oats, eggs, baking powder, milk, sweet freedom syrup and salt into a food blender and blend it until it's smooth
  2. Pour the pancake mixture into a bowl and add most of the blueberries to the batter
  3. Preheat a nonstick frying pan with some coconut oil
  4. Pour the pancake mixture into the frying pan (you should be able to cook about 4 pancakes at once depending on the size of your pan). Once the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown
  5. Put all of the raspberries in a non stick saucepan along with a teaspoon of coconut oil and cook it on a medium heat for about 5-7 minutes whilst stirring it
  6. Serve the Pancakes and Sauteed Raspberries along with the rest of the Blueberries, drizzle Sweet Freedom Syrup on top

I am literally obsessed with this recipe and so proud of myself for coming up with something that works so well! Even my gluten loving boyfriend really approved on this pancake recipe. They're so tasty and best of all there is no added crap! You can enjoy these pancakes for breakfast or lunch and not feel guilty. Because they are made from oats and Sweet Freedom syrup instead of sugar they will keep you feeling full and energized. 


Let me tell you a little bit more about Sweet Freedom* -  it's a Great Taste Award winning fruit syrup made from apples, grapes & carob. Meaning that the sugar in the syrups is 100% natural, vegan,  it's not genetically modified, it's gluten free, dairy free and it's low GI meaning that it doesn't spike the sugar levels.
Or in other words, it's not full of crap like golden syrup or other chocolate sauces and syrups. 
For the recipe I used the original Sweet Freedom syrup.
If you're a chocolate lover Sweet Freedom also have 'Choc Shot' variations which include Orange Spice & Coconut. All three can be used for drizzling on pancakes, ice creams, fruit or anything else you can think of or be turned into hot chocolate when added to warm milk.
