Thai Chicken Noodle Soup

Ever since I visited Thailand I have fallen in love with Thai Food. It's aromatic and full of flavour. I've decided to experiment with some Thai Chicken soup recipes and have come with this mouth watering creation.
It's very quick and easy to make and it's Gluten Free.









Ingredients
Serves 2 very large portions or 3 normal size portions

  • 2 Chicken Breasts
  • 3 Cloves of Garlic
  • 1 Onion
  • 100g Beansprouts
  • 100g of Cabbage or Pak Choi
  • 1 Small Red Birds eye chilli (you can add more if you like your food spicy!)
  • 1 and a half chicken stock cubes ( I use Morisons own because it's gluten free)
  • 3 Spring onions
  • 1 Teaspoon Thai Red Curry Paste
  • 2 tsp Thai Fish Sauce 
  • 1/2 tsp Soy Sauce ( I used the Gluten free version)
  • A handful or fresh corriander
  • 150g of Rice or Glass Noodles

Method

  • Slice the chicken breasts into strips
  • To make the broth, place the chicken breasts in a large pan full of water and cook on a medium heat for 15 minutes.
  • Add all of the ingredients Apart from the noodles, spring onion and coriander. Cook for further 15 minutes.
  • Add the noodles and boil for another 5 minutes.
  • Scatter the spring onions and fresh coriander and serve!

  6. This looks so yummy, I love thai food and this looks like such an easy and healthy way to enjoy it more often. I love that it doesn't have coconut in as my housemate can't eat it so I'm sure she'd really enjoy this x
