Gluten Free Peanut Butter Snack Bars


I get to a point every day where I feel like I need a snack. 

Usually somewhere in between breakfast and lunch or lunch and dinner. I eat a lot of fruit throughout the day, but sometimes fruit just doesn't full the whole. Now that is the time when I start daydreaming about crisps. 

Or at least it was until I discovered the delicious, No Bake, Gluten Free (winner!), Vegan,  Peanut Butter Snack Bars.


They taste so good that it seems almost wrong that I don't have to feel guilty for eating them!

They are full of: 
Protein
Potassium
Vitamin B 
Iron
Delicious Flavour

And believe it or not they only take about 10 - 20 minutes to make.



Ingredients:

  • 190g of Whole Rolled Oats
  • 160g  Dates
  • 140g Peanut Butter ( I used unsalted organic peanut butter)
  • 100g Sunflower Seeds
  • Half a teaspoon of Organic Raw Coconut Butter


Preparation:
  • If you like me buy dried dates, soak them up in warm water for about 10 minutes. 
  • Blend the Dates and Peanut Butter
  • Shallow pan fry the sunflower seeds until they are a shade of golden brown
  • Mix the Oats and Sunflowers seeds with the blended dates and peanut butter
  • Spread it in a dish and leave in the fridge for about 15 minutes to set.
  • Cut them up in desirable sized pieces and ejoy!
  • Leave whatever you don't eat in the fridge to keep them nice and solid.

As much as I would love to claim this recipe as my own, I must give the credits to Minimalist Baker where I have discovered the original recipe. 

I have tweaked it as I think the sunflower seeds add a really delicious flavour and some extra nutrients.

The boy has said that eating these snacks at work is his favorite part of the day!

  1. These look incredible! I'm such a serial snacker in work and I definitely need some alternatives to biscuits with my afternoon cup of tea. I also love peanut butter so another way to eat it definitely gets a big thumbs up from me!
