Glorious Gluten Free Banana Pancakes

Pancake Tuesday used to be one of my favourite days of the year.

I can make sweet moreish pancakes as well as bad ass saliva inducing savoury crepes.

I used to love indulging in pancakes once in a while, but then I developed IBS. It seems that my body became sensitivity to gluten and the more I ignored it and kept eating pancakes, pizzas, breads and cakes the worse it has gotten.

If you, like me, have gluten intolerance or are just trying to cut out those empty carbs I have good news!

I've discovered a glorious super easy pancake recipe which I promise you will use again and again.

You know what the best part is? They're Healthy meaning that it can be Pancake Tuesday every Tuesday! Hooorah.

Okay, so let's get down to business.

Recipe:

Ingredients

Serves one
For the pancake mix
  • 1 Medium to large Banana
  • 1 Egg
  • A handful of Water Soaked Rolled Oats (Optional)
  • Very small Pinch of Sea Salt
  • Raw Organic Coconut Oil for frying

The Topping
  • Two Table Spoons of Cottage Cheese (Naturally low in fat)
  • 1 Teaspoon of Strawberry Preserve (I used Bonne Maman)

Method:

  • Cut up the banana into small slices and pop it into a blender 
  • Add the egg and blitz it 'till it's smooth baby (if using Oats throw these into the blender too)

Organic Coconut oil





That's it you've got your batter.
  • Now pre-heat the frying pan on medium heat 
  • Add about a teaspoon of coconut oil 
  • Fry the pancakes for a couple of minutes on each side until a nice light brown in colour.

Put the cottage cheese and the strawberry preserve on top. I personally like to pop them in the microwave for about 30seconds on high heat so the cottage cheese warms up.

Sounds strange? Sure! Does it taste good? Very.

I've shared with you the healthy version of this recipe, however, if you don't like cottage cheese you can get really creative with the toppings.

If you're feeling frisky add the usual things like Nutella, Golden Syrup, Lemon and Sugar or Sauteed Berries and Cream.

These pancakes go really well with a nice fruit tea. One of my personal favourites is Whittards Acai and Goji Berry.

  5. I love making these, I've not tried them with cottage cheese as a topping though (I'm normally nutella and strawberries!) so I'll give that a go :)
