Mega Healthy Breakfast Eggs

How do you like your eggs in the morning?

I like mine pretty much every way there is. Eggs are one of the most versatile, healthy breakfast options. You can dress them up or dress them down as you like. 

It's the day before Christmas (YAY!) which means it's more tempting than ever to opt in for a bacon sandwich or a full Engish/Irish fry up for breakfast which will only leave you feeling bloated and lethargic later.

Below is one of my spontaneous breakfast creations which I promise tastes super scrumptious!

Recipe

Mushroom Pepper Egg

Serves 1

Ingredients:

  • One yellow pepper (or any colour that you prefer)
  • A big handful of mushrooms
  • One egg (add more if you're very hungry)
  • One small avocado
  • Schwartz Piri Piri spices
  • Dash of Carotino red palm oil (or raw organic coconut oil)

Preparation:
  • Slice up the peppers and mushrooms. I like mine really chunky but slicing them up finer would work fine too. 
  • Add a drizzle of Carotino oil and let the vegetables sizzle for a couple of minutes
  • Add your egg to the vegetables and fry it for another couple of minutes
  • Add Piri Piri spices to season
  • Chop up the Avocado and enjoy it as a delicious creamy garnish.
Add the cooked egg and vegetables to your plate and voila!

  1. Oh this looks so amazing!!! I usually make a breakfast scramble with potatoes, onions, green peppers and chopped up turkey bacon. I have acquired a taste for mushrooms recently and my boyfriend despises onions, so I will probably make this for his breakfast.
